If you want to cook memorable food you are gonna need to set aside the time to make the food you want to eat, be patience and do not rush yourself, and be loyal to the dish.
Getting Started
First of all you should know what shank is and what it isn't. Shank refers to the leg of a pig, lamb, cow etc.. Since the leg does so much work that meat is gonna be super tough and sinewy so in order to cook it properly you are gonna have to take your time with it. It's not a ribeye steak that you can grill quickly and be done with it but it is just as good if prepared properly.
Go to your local butcher shop and ask them for shank. You'll need to know whether you want to do lamb, pork, or beef and I will walk you through a recipe for each one of those shortly.
